Portobella Mushroom Burger with Avocado Sauce
1 portobella mushroom(stems removed) per person
1 med onion cut in to slices
3 tblsp olive oil or so
2-3 tblsp yogurt
1/2 tsp garlic
1 soft avacado
Wash and brush mushrooms with olive oil. Sprinkle with soya sauce and season with salt and pepper-let sit
Make Avacado sauce: Mash peeled, ripe avacado, use as much garlic as you like (I used 1 clove chopped), and add 2-3 tblsp of yogurt. Let sit in fridge.
Chop onion, red pepper, and zuccini(cut in rounds)
Lightly grill veggies in pan with hot olive oil just until soft
Grill mushrooms in oven or on bbq for 8-10 minutes total, flipping half way through-they will shrink a bit
Spread avacado sauce on bun, lay mushrooms down, top with veggies, sprinkle with feta
I served with homemade oven cooked fries.
